On my Web site (lebrewcoffee.com), I have each school as a ROOT category. When the school is selected, then the customer can order the coffee of their choice. In Ecwid, I check the order. The root category is NOT showing up in the order. What did I do wrong?

Unfortunately, for now categories are not shown in order details. If you think such functionality should be in Ecwid, feel free to add your suggestion to our Ideas Base: http://ideas.ecwid.com/forums/22031-...deas-for-ecwid
But if I got you rightly, you may not need to use categories. If you need to know what school customer chooses, I suggest you use product options:
You should create option “School” for each product, with school names as option values. A list of school names will be displayed on the product pages, and customers will be prompted to choose one (or several ones, option type ‘checkbox’ allows selecting more than one option). The choice will be recorded in the order, and you’ll see it order details page (in your Ecwid Control Panel-> Sales).
In this case you don’t need to use categories.
