I need to see is if tags can be added to products? I'd also like to add a tag cloud to help users find our products easier.

Unfortunately it is not yet possible with built-in tools. There is a corresponding idea in our ideas base: http://ideas.ecwid.com/forums/22031-...uct-tag-clouds Please, vote for it for the feature to be implemented sooner.
