In a nutshell, Ecwid has a responsive layout that adapts to different screen sizes and resolutions by default. When a store is opened, Ecwid identifies the screen size and resolution and then, based on this information, displays as many products in a row as possible with current settings without losing thumbnails quality. With the current storefront, it's possible to display only one column of products on mobile devices while having the highest thumbnails quality. That's why you are only able to have one column of products.
