I am opening a store and I have employees who are able to list their own inventory on my store for commission but I dont know of any way to keep our inventories separate without resorting to an honor system. Is there a way others can list product in my store with restricted admin rights?

As a workaround you can consider the following solution: each vendor provides you with a CSV file that contains their products data (SKU, price, quantity, description, image etc.) and you import that file in your control panel as described in this article: http://kb.ecwid.com/w/page/26373353/Import-Export
Perhaps, such a solution would meet your requirements to some extent.
