I would like to adapt the invoice template to our local practices here in Germany.
I managed most things quite well, but I can't find a way to output the date variable
${order.dateCreated} in a common German format.

Is there any way I can achieve this?

Desired would be something like this:
30. Februar 2020 (DD.MM.YYYY)

SORRY, I somehow overlooked the possibility to change the date format in the store management.

If I got you right, you'd like to change the Date display format to DD.MM.YYYY. I've checked your Ecwid account and I can see that you've already done it. That is great!

In case you decide to change it again, please, follow the instruction below:

1. Go to your Ecwid Control Panel → Settings → General → Regional Settings tab.
2. Find the Date & Time section.
3. Select necessary Date display format from the drop-down list.
4. Save the changes.

That's it! Once you do the steps above, you'll be able to change the Date display format. It will be automatically changed for invoice and customer notifications.
