One of the sites on your showcase... http://www.naturalbodyinc.com/ has subcategories. I was wondering if this is a part of the Silver plan or if this is a custom option.

Subcategories can be created with both paid and free Ecwid accounts - to create them please proceed to your Ecwid control panel -> System settings -> Catalog -> click on the the category you would like to create subcategories for -> click “New subcategory” button and fill in the data for the new subcategory. Then click “Save (Ctrl+S)”.

If you mean you would like to have a vertical menu with the expanding subcategories - you need to create your own custom vertical menu. Please refer to the following thread for more details:
