Hi Greg,
To allow your customers to select delivery date you can use two Ecwid features: datepicker product options and/or order comments.

1. Datepicker product options
You can add a datepicker to your products as an option.
A customer will be able to select a date before adding product to his bag.
You can also set this option as required, so your customer won’t be allowed to add product in his cart until he choose a date.

2. Order comments
Ecwid has a tool that allows you to ask the customer for additional information during checkout. You can enable it in your control panel (System Settings > General > Cart > Order Comments) and allow your customers to write notes and add specific information to their orders. After orders are placed they will be displayed as notes in your Ecwid Control Panel.

This feature can be used to collect any specific information or considerations that your customers would like to attach to an order. So they can put there preferred delivery time (as a plain text), if you set a corresponding capture for this field.
