To set the different weight when some options are selected, you can use the
product combinations feature available in Ecwid for Silver plan accounts.
For each set of the option values that changes the price and hence needs the different weight, create a combination and assign the correct resulting price and weight at the same time for it (combinations do have an independent price, weight, image and SKU, so you can change any of those freely for each set of options).
This way you can still have the correct free shipping at specified order total even when the price is adjusted by options selected.
