Is it possible to create a shop, embedded in an existing site, whereby site visitors must sign up before seeing product prices.

And have 2 seperate "departments" with separate sign ups: say

Department 1 is Sporting Equipment

Department 2 is Sports Drinks

and you must sign up per department - but shopping the one Ecwid cart.

AND: for visitors yet to sign up, present those 2 departments as Catalogues ...

That is, visitors see all the products but not the prices, until they register.

As for separate sign ups for different categories, I am afraid it is currently not possible, but you can consider a workaround - display separate storefronts on different pages as described in this article:
http://kb.ecwid.com/w/page/27229589/...

However, please pay attention to the fact that even this way each registered customer will be able to log in to both storefronts with the same email/password.

Could I use a password login on the second page for the second shop? A visitor would first login to the page, then login to the shop.
