the issue I have is as you can see all the category thumbnails display fine but I want each category title to be displayed underneath the icons.

Can this be done? If so where do I find this setting please.

Categories’ titles always show underneath the category icon by default. I have checked your store and found out that you have added following code in your custom CSS theme:

div.ecwid-productBrowser-subcategories-categoryName { display:none; }

This code hides all categories' titles. Therefore, in order to show them again you should just delete this code from your CSS theme.

Once you do this, titles will be shown properly.
